Instructions
- Preheat oven to 350°F (180º C). Pour contents of into small bowl; stir. Combine ½ of the Knorr® Lipton Recipe® Onion Soup Mix with 25% less sodium, beef, bread crumbs, eggs, 1 zucchini, grated, and ketchup in large bowl; shape into loaf in large roasting pan.
- Slice remaining zucchini into rounds.Toss carrots, zucchini, remaining Soup Mix and oil in large bowl; arrange around meat loaf.
- Bake uncovered 1 hour or until done, stirring vegetables once. Let stand 10 minutes before serving.
- Each serving of this dish provides 1½ servings of vegetables and is a good source of iron and vitamin C.
